Memphis Style Barbecue.

I'm sorrrrryyyyy. I've been a little lazy lately. Exams and shit.
Anyhow, I'M BACK!! With something I've never tried before. Memphis Style BBQ chicken. It is BLOODY BRILLIANT. Mine could use just a little bit more salt, though. Here's the recipe that I used..

Ingredients:
1/4 cup paprika
1 tbsp. brown sugar
1 tbsp. white sugar
1 tbsp. kosher salt
1 1/2 tsp. freshly ground black pepper
1 tsp. cayenne
1 tsp. dry mustard
1 tsp. garlic powder
1 tsp. onion powder

Nothing to do actually. Just mix everything together and put it on your chicken. This could work well with ribs too. I didn't have Cayenne pepper, garlic powder and onion powder. So I used fresh garlic and onion instead (And didn't use any Cayenne at all!)

Proportions:
1 tsp. onion powder = 1/3 cup of chopped onion
1 tsp. garlic powder = 8 medium sized cloves of garlic

I just put everything in the processor with two tbsp. of water and blend it all together. Supposed to be a dry rub, but, what the heck!
Also, I made it at home on a pan grill. Worked as good as a coal grill.

You'll realise, after seeing the video, that making home-videos isn't really my thing! But, HAPPY BIRTHDAY MEENAKSHI SINGH!!! You're being missed too much, okay? :* I spared you the virtual slobbering. I'll make up for it, once you're here. You better study hard and not give retests!!!!! HAPPY BIRTHDAY!!! :D

So. I made these amazing lemon pound cupcakes. They are too die for. The reason I'm doing this to you, Meenakshi, is so you come back faster, cause:
a. I have to slobber your face.
b. You have to re-do my blog.
c. I want to stop feeling deprived of friends.
d. You have to get me blueberries so that i can make blueberry muffins.
e. You'll get to eat blueberry muffins.
f. I have so much to tell you!!!!
g. I want to hug you instead of my laptop. Even though it's as skinny as you are.

um, I'll think of more and keep updating this list.
Also, You have to take me shopping, cause I have promised myself to become a UK size 12 by the time you're here. YAY! I can't wait for you to get your skinny butt here.

Rainbow Muffins with Choco-almond ganache

Yes! So, I shouldn't be calling them rainbow muffins actually. I just used three colors. I couldn't find the others. I used liquid food coloring for these, though gel food coloring is strictly recommended. Cause the colors are so much deeper when that's used!
Also, I used roasted almond chocolate for the ganache. Brilliant crunch! :D

Bye Divvy! Hi Mathur :)

Firstly, congratulations to me on my first order. 6 eggless chocolate chip cupcakes with chocolate ganache. It was my friends sisters 21st birthday yesterday, and she ordered my cupcakes! And apparently they LOVED them. Especially the ganache. Here's how they looked..






Also, the reason my posts called what it's called. DIVVY'S leaving! and MATHUR'S back :)
Well, Divij and Karan are my friends who are extremely fond of eating, especially anything sweet. I'd promised Divvy I'd bake cupcakes for him but I didn't get the time today. SO. I made shortbread jam cookies!!

Whatta brilliant day!

Pure bliss today. So satisfying. So much happiness. Now I know how much I love doing this. So much love. for cooking, for baking. For food.
I made Mocha cupcakes today. With chocolate ganache. They turned out to be pretty brilliant. And I also made pasta for my brother!

These are the mocha cupcakes fresh out of the oven.

I think this is the best pasta I've ever made.

Breakfast love.

I love a big breakfast. Mostly it's the unhealthy kinds that i prefer, but since i'm trying to lose weight now, i'm exploring my options.

This was my breakfast today..

I don't know what to call it, though. It's technically a vegetable sandwich, but it's open. It's like a bruschetta with a twist. I'm not too big on tomatoes, so.
I shall call it, The Breakfast of the Day.

February 26th, 2012

Today was relatively boring. In terms of cooking at least. I had guest the whole day today, and mum cooked. She didn't want me to experiment :/

But i cooked still. I made the dip for the starter, with was chip 'n' dip. And i also made the dessert. Fruit cream. Both the things turned out to be pretty cool actually.

I made a hung curd and garlic dip. I the healthiest dip ever. And brilliantly easy. And it takes about 10 minutes to make it. Since the guests turned up before time, i had no time to hang the curd. So, i just poured it into a muslin cloth and squeezed out the excess water. I use this method ONLY if there's an emergency. Usually the dip isn't very thick if this methods used. OBVIOUSLY.

The desserts too easy to even talk about. It's just cut fruits and sweetened cream. Bleh
